About Cabernet Sauvignon
Cabernet Sauvignon is often referred to as the noblest of all grape varieties. It forms the backbone of many great red wines of Australia and the world. It offers aromas and flavors of blackcurrant and plum, and often produces wines that can age for a very long time. The Cabernet Sauvignon grape has a thick skin and, during the wine making process, a lot of tannins can be extracted. This can mean the wine will be quite dry and maybe slightly bitter. If this occurs a percentage of merlot will often be added to the blend to soften the wine. These tannis can soften over time, which is why a higher quality Cabernet Sauvignon may require some bottle aging before drinking.
